You salt the skirt and the marbling is already visible in long lines—the mark of our clean Angaushi. Grill or sear it very hot and fast to medium-rare, then slice thin against the grain. It will be richer and more tender than the ordinary skirt the store sells for fajitas, and still cost less once you count what you actually eat.
