When you lay the flat down, the grain looks almost polite. Still, the Red Wagyu marbling is there—fine, persistent, earned on Texas grass without vaccines or hormones. Smoke it for slices that hold their shape, or braise it until it yields. Either way the flavor is cleaner and deeper than the commercial flat that pretends to be the same cut.
